We’re finishing the countdown to ¡Salud! and getting to know our final Vintners Circle winery a bit more before tomorrow’s event!

Today’s featured winemaker – Steven Westby of Witness Tree Vineyard

1)  How did you select your ¡Salud! Cuvée and what makes it stand out from the other wines in your barrels?

Our ¡Salud! Cuvée is a blend from my favorite barrels from each of the “sweet spots” in our vineyard.

2)  What foods and flavors would you pair your ¡Salud! Cuvée with?

I have a favorite recipe of salmon and scallops on a bed of spinach with a mustard butter sauce.  I think that would be perfect.

3)  What is your mood leading up to and during harvest; do you go Zen or get a bit frantic?

I am a little ADHD, so tend to make everyone else on the harvest crew frantic.

4)  When not making wine, what fills your spare time?

Until recently we were busy raising our children, but we are now empty-nesters so I’m looking for new hobbies.

5)  If you hadn’t chosen the path of winemaking, what would you be doing instead?

Absent-minded professor.
