This year’s ¡Salud! Cuvée comes from our winemaker’s favorite three blocks of Pinot Noir from the property. It is equal parts from Block 1 – Pommard, Block 5 – Dijon 115, and Block 6 – Dijon 777. The Pommard provides wonderful silky textures and an abundance of red fruits. The 115 adds to the beautiful color and acidity of the wine, and finally the 777 rounds the wine out with its juicy and supple textures and flavors. We were able to pick the vineyard a couple of weeks later than in previous years, so the fruit got a good amount of hang time in the cooler temperatures we see in October, making the wine complex while still maintaining the delicate and balanced side of Pinot Noir.
Aging:
10 months in barrel, 35% new French oak, 25% once filled French oak, 40% neutral French oak
